A Healthier way to enjoy this favorite

Pizza is one of those foods that transcends borders and it’s easy to see why - from students to septuagenarians, everyone enjoys this cutlery free classic.  I’ve enjoyed eating this dish since I was wee and encountered it wherever I’ve traveled, from below par tourist pizza in New York to weird fusion versions in Bangkok. The pizzas we tend to get in the UK aren’t always the healthiest so I’ve come up with this alternative. Introducing sweet potato into the dough is a clever way to sneak good carbs into the dish, and when topped with pizza favourites mozzarella, tuna, sweetcorn and onions you’ve got a great meal you don’t have to feel bad about getting stuck in to. Ditch the takeaway types and make this your new cheat day meal; with around 12g of protein per slice, you can’t say no .

Sweet Tattie Pizza

A healthy way to enjoy this favorite

Ingredients -

Preparation time around 1 hour 15 minutes.

Dough

2 Large Sweet Potatoes

150g plain flour

1.5 tbsp of baking powder

Salt

Toppings

2 Garlic cloves

1 or 2 Tins of Tuna (Pack your protein in or not)

1 Onion

1/2 of Sweetcorn

1 ball of Mozzarella

Tomato Puree

Thyme

Rocket

Olive Oil

Salt

Pepper

Method -

  • Peel and boil your potatoes until soft then drain the water. Add salt, mash and leave to cool down.

  • Whilst the tatties are cooling down, prep your t toppings. Finely chop 2 garlic cloves, 1 onion and ! ball of Mozzarella.

  • For the topping sauce, in a small bowl add a generous helping of Tomato Puree, 50ml of water, salt and Thyme then mix together.

  • Now that your Sweet Potato mixture has cooled d own Pre-heat your oven on gas mark 6 (200 or 180c for fan assisted), sieve 150g of Plain Flour into the mixture, add 1.5 tbsp of baking powder and salt before folding the mixture into each other.

  • Dust your work top with flour, Knead the dough for about 5 mins before rolling the dough out to your desired pizza shape. (please note the above amounts is enough dough for two Pizzas) Once shaped, place your dough into the oven for 15 mins.

  • Once baked, remove your base from the oven and spoon the tomato base evenly over the base. (you can expect a slight rise in the dough to happen here)

  • Now add the other toppings and bake for 15-20 mins

  • Once baked remove from the oven, season and dress with fresh Rocket and Olive Oil.
