Post-workout Pancakes

As it's almost pancake Tuesday and I'm currently dieting I decided to throw together the perfect post-workout pancake dish. Meaning I can enjoy shrove Tuesday whilst adhering to my current diet and training program. It’s a simple dish to make and comes to around 450 cals, providing 26g of protein, 78g of carbs and 5g of fat. I opted for fresh strawberries, blueberries and maple syrup to keep the cals low but add some extra sweetness (& fast acting carbs) to this moreish plate.

Post-workout Pancakes

Moreish carbs and protein - when you need it most!

Ingredients -

Preparation time around 10 mins

Pancakes

30g of oat flour (or rolled oars)

1 banana

30g of whey protein from Spartan

100ml of almond milk

1 tbsp of cacao powder

1 tsp baking powder

Coconut oil

Topping

Maple Syrup

Strawberries

Blueberries

Method -

  • Add the banana, oat flour, protein powder, almond mIlk, cacao powder and baking powder to a blender. Blitz for a few a minutes until you have a runny mixture.

  • Add 1 tbsp of coconut oil to a flat frying pan on a medium heat. Then pour in your pancake mixture slowly creating one pancake at a time. Cook on a low heat for a few mins (flip half way through) until golden brown.

  • Layer your pancakes with some maple syrup, blueberries and strawberries. Then enjoy!

  • The above mixture should get you around 4 pancakes. Once ready stack and serve.
