Lean Mean Meatball Linguine

Looking for a low carb, low-fat high protein tasty dinner option? Well, try my lean mean meatball linguine! It’s a great meal prep recipe that can be adapted to suit your own goals. The meatball itself is a mixture of turkey mince, paprika, chilli flakes and mushrooms. (to add some moisture to the ball) The sauce is homemade and really simple to make. It consists of red onion, fresh garlic, fresh tomatoes, tomato puree, salt, paprika and chilli. *Avoid buying tinned chopped tomatoes from the supermarket where possible, as usually these tins are packed full of sugar and salt. One serving of this dish based on 100g of cooked pasta and 150g of cooked meatballs comes to around 450 cals providing 41g of protein, 40g of carbs and 11g of fat. Making it a great go-to when on a cut!

Lean Mean Meatball Linguine

A better way to enjoy this classic

Ingredients -

Preparation time around 40 mins

450g lean turkey mince

100g linguine (uncooked)

1 large egg

100g chestnut mushrooms

2 red onions

4 medium tomatoes

2 cups of green beans

4 cloves of garlic

Paprika

Chili flakes

Tomato puree

Coconut oil

Salt + Pepper

*the above measurements should provide around 3-4 portions.

Method -

  • Preheat your oven to Gas mark 4 180 degrees celsius

  • Finely chop your garlic and mushrooms, dice your onions and then quarter your tomatoes & green beans.

  • Add your mince, mushrooms, egg, chili flakes (1 tbsp), paprika (1-2 tbsp) and seasoning to a large mixing bowl. Mix together and start to form into wee balls for the oven. Once all the mixture is used up, add the balls into the over for 25 mins.

  • Add your pasta to a pan of boiling water and leave to soften for around 8-10 mins.

  • Add 1/2 tbsp of coconut oil to a hot pan (on a medium heat) then add your garlic & onions and allow to cook for around 6 mins.

  • Once your onions have softened add your tomatoes, some tomato puree (1 tbsp), 1-2 cups of hot water, paprika (1 tbsp), chili flakes (1/2 tbsp) and salt.Then add your green beans and allow to cook for 6-8 mins and squash your tomatoes down, so they release their juice.

  • Once all 3 elements of this dish are ready, combine and garnish with some fresh parsley leaves.
