Chocolate & Chickpea Tart

With Christmas just around the corner, I have been experimenting again and as my niece is also getting married next year. There is plenty of motivation within my fam to get into shape. Below is my no bake, no flour, no sugar vegan tart. Which will now become the Christmas day dessert at my mum’s. The cake itself comes to 800 kcals and can serve up to 8 people. With most shop bought cakes out there having up to 3 times more calories in them, why don’t you start your January dieting a little earlier…

Chocolate & Chickpea Tart

An oaty, CHOCOLATY & Healthy no bake cake

Ingredients -

Preparation time around 15 mins

1 cup of rolled oats

1 cup of cashew nuts

250g of dates

4 tbsp of maple syrup

1/2 cup of water

240g if chick peas

1 banana

2 tbsp of cacao powder

*I used an everyday tea mug for my cup measurements here.

Cacao nibs

Maple Syrup

Raspberries

Cranberries

*Of course you can get creative with your toppings here, I opted for cranberries due to it being the festive period.

Method -

  • Add your oats, cashews, dates and 3 tbsp of maple syrup plus some water into a blender and blend.

  • Once you have a dough like mixture, line your baking tray. (The above filled one 8 inch/20 cm tray) Then pop this into the fridge to cool.

  • Now for the cake filling - blend together your 240g of chickpeas with banana, 1 tbsp of maple syrup and 2 tbsp of cacao powder.

  • Once blended add the filling onto the cake base and leave in the fridge to cool for a few hours

  • For the topping chop your fruit and once the cake is chilled top with your fruit, cacao nibs and more maple syrup. Just for that extra sweetness!

  • Its a super simple, no bake healthy chocolate cake. Enjoy!
