Healthy Hogmanay Pie

Traditionally, in Scotland, we have steak pie on new years day and growing up in a household that doesn't eat beef we've always had an alternative meal. 

Try my showstopping but simple and healthy chicken pie recipe. A tasty alternative to the traditional steak pie at Hogmanay in Scotland. 1 serving comes to 240 calories with 36g of protein. I opted for buttermilk to add that creaminess to my sauce. It has way fewer calories and fat versus a double cream. And this recipe will feed a table of 6 with leftovers. To accompany the pie I went for a simple sweet potato mash and some grilled asparagus. Which keep this healthy meal under 400 cals per serving. With the average streak pie dinner coming to 570 calories, my healthy version is a must make!

Showstopping pie

a healthy alternative to that new years day steak pie.

Ingredients -

Preparation time around 45 mins

Filling

650g Chicken

250g Mushrooms

1 large Leek

150g baby leaf Spinach

3 Knorr Chicken stock cubes

150ml Buttermilk

10g Thyme

1 tbsp of Coconut oil

2 cups of water

Season to taste

Pastry

Filo pastry

Olive oil

Method -

  • Prepare all the veg - chop your leek into discs, the mushrooms can be quartered, roughly chop your spinach and remove the stalks from your thyme. Dice your chicken breasts and set aside.

  • Preheat your oven to 190 degrees Celsius, gas mark 5 for fan assisted.

  • Add 1 tbsp of coconut oil to a hot pan, before adding your leek and mushrooms. Allow these to cook for a few minutes, then add your diced chicken.

  • After a few minutes of cooking your chicken, add 3 stock cubes followed by 2 small cups of hot water.

  • Then add your buttermilk, spinach and finally thyme. Don’t forget to season the pie filling to taste.

  • Allow the mixture to cook for a few minutes before adding to a pie dish.

  • Then scrunch up some filo pastry sheets to place on top of the mixture, make sure you fully cover the mixture. Drizzle with olive oil, before placing into the oven for 20-25 mins.

  • Once complete, plate up and enjoy!
